Place the tomatoes in a medium bowl. Add the garlic, olive oil, vinegar, salt, pepper, and Italian herbs. Stir to coat.
Transfer the tomatoes to a small baking dish.
Roast the tomatoes until they are soft and beginning to burst, about 20 minutes. Let them rest for 5-10 minutes
Meanwhile make the cheese mix, using food processor mix feta cheese with heavy cream, olive oil, lemon zest, garlic and black pepper until creamy and well combined.
On a plate add cheese mix, top with roasted tomatoes, garnish with parsley and serve with your favorite roasted bread.
